M is for Mud Pie - ABCs of Homeschooling

This week we made Mud Pie - a recipe from Alpha-Bakery (the cookbook that Sophia received as part of her homeschool home economics class).

Each week, we are making a different recipe and going in alphabetical order. We've reached the middle of the alphabet this week - 13 recipes made...13 left to go.


Mud Pie

Ingredients

1 cup granulated sugar
½ cup of butter, melted
1 teaspoon vanilla
¼ teaspoon salt
2 eggs
1/3 cup all-purpose flour
1/3 cup cocoa
1 cup chopped nuts, optional
¼ cup fudge sauce or topping
1 cup chilled heavy whipping cream
2 tablespoons powdered sugar
Additional fudge sauce for topping

Directions

Heat oven to 325º F. Grease bottom and side of round pan, 8 x 1½ inches, or pie plate, 8 x 1¼ inches.
Stir together granulated sugar, butter, flour, cocoa, vanilla, salt and eggs in medium bowl, add the nuts, and pour into pan.

Bake for 25 to 30 minutes or until a toothpick inserted halfway between center and edge comes out clean (center will be moist). Immediately prick holes in pie with toothpick, and spread fudge sauce over top.
Cool completely, about 1 hour.

Beat whipping cream and powdered sugar in chilled medium bowl with electric mixer on high speed until stiff and spread over fudge sauce. Drizzle with additional fudge sauce and serve. Cover and refrigerate any remaining pie.

Looks very yummy!! I should do something like this with my kiddos. My six year old learns a lot through DOING things. =) (Here from the ABC's of Homeschooling.)
