This week for P52's Photo Challenge, the theme is Summer Treats. One of the first things that came to mind was a special lunch or dinner that my mom would make when it was very hot outdoors and a light meal seemed most appropriate.
She would put a paper cupcake holder in the middle of a plate and place a scoop of sherbet in the center. Sometimes it was a single flavor, other times rainbow flavor.
Around the sherbet, she would have a variety of fresh fruit - pineapple, cherries, blueberries, strawberries, peaches, and nectarines.
Fresh fruit was such a treat growing up, especially the berries and pineapple. These were "luxury" fruits compared to apples and oranges that we would have for lunches during the school year; or canned peaches or pears or frozen blueberries that we would have for breakfast or dinners.
With temperatures in the upper 80s combined with high humidity, this seemed like a good meal to make this week. Served with homemade pita bread (made by Olivia), and a slice of coconut cream pie with whipped cream for dessert (made by Sophia)...I couldn't ask for a better meal!

This looks delicious. Even though we've had a break in the weather around here, I've found myself sweating it out several times today doing all the things I've been neglecting! I want that fresh fruit! And that sherbert... :)
I always loved Sherbet, my favorite is Raspberry! Summer is the season for all sorts of exotic and local fruits that are best fresh off the tree. Nice memory!
What a wonderful summer treat! My kids love when I decorate their snacks/lunches :-)
