Red Velvet and Lace Cookies

This year I participated in the 2012 Christmas Cookie Recipe Swap that Julie from White Lights On Wednesday is hosting.

The cookie recipe I received came from Caitlin from Sugar Spice and Everything Nicely. The recipe came on a festively-decorated card and was one that I had not made before: Red Velvet and Lace Cookies.

Red Velvet and Lace Cookies

I have heard of red velvet cake before, but have never made it because I never have a full bottle of red food dye on hand. The cake mix easily solved that problem. The coloring is already in the mix.

The recipe suggests baking the cookies for 8-10 minutes. I chose to bake them for 8 minutes and they came out very moist and delicious. 

To make Red Velvet and Lace Cookies, simply follow Caitlin's recipe:

Ingredients:

1 box of Red Velvet Cake Mix
2 eggs
1/3 cup oil
Powdered sugar

Directions:

Preheat oven to 375 degrees. Mix together one box of Red Velvet Cake Mix, the eggs, and oil. 

Having never used Red Velvet Cake Mix before, 
it was interesting to see the mix turn from brown to 
bright red as it was mixed with the wet ingredients.

Then roll teaspoon-sized balls of dough in powdered sugar.

Ready to be rolled in powdered sugar.

Next, place on a baking stone (or parchment paper lined cookie sheet). Bake for 8-10 minutes. Cookies will crackle on top. 

Cookies cooling before we taste them.

Let cool and enjoy!

  8. Oh my these looks good! I also had a red velvet recipe and I know what you mean about the mix turning to read - I looked at in the box and thought I had bought the wrong mix!
